Pans and pots

Let a hot pan cool before washing it. Plunging hot metal into cold water can warp the base.
Heat gradually on a burner that matches the size of the base, and never leave an empty pan on a high heat.
Use wooden, silicone or nylon tools on coated surfaces.

Cast iron

Wash by hand with hot water and a brush. Do not soak.
Dry straight away, then rub a thin layer of cooking oil over the surface while it is still warm.

Non-stick coatings
